The back and forth between Winter and Spring these last few weeks has had me not feeling my best lately, but I think I found the cure! Recently at work, I had been developing simple, cultural recipes for our kid’s cooking events. For this past series, “Dreaming of Japan” I created this 4-ingredient, kid friendly, miso soup. Through the recipe testing and tasting, this soup turned out to be my new sick remedy. For the next time you’re feeling the blues and are too lazy to cook, throw together this 15-minute miso soup to kick the cold right out!

(serves 8, serving size 1 cup)

Ingredients

8 cups of vegetable stock

¾ cup of white miso paste

14 oz. silken tofu

1.5 bunch of chopped green onions 

 

Directions

In a large pot bring the vegetable stock to a boil. Lower the heat to a simmer and whisk in the miso paste. Pat the tofu block dry with a paper towel and cut into tiny cubes. Lastly, add the tofu and the green onion to the soup base. Simmer for 10 minutes and serve!
