Avocado Toast with a Vegan Lemon and Thyme Cream Cheese

Ingredients:

(Servings: 1-2)

-3 tbsp of extra virgin olive oil

-2 slices of ½ inch cut bread (any bread you like: I prefer multigrain, French, or sourdough)

-1 small ripe avocado or ½ of a larger avocado

-3 tbsp of vegan cream cheese

-2 tsp of lemon juice

-2 tsp of fresh thyme

-salt and pepper to taste

-1-2 tsp of red pepper flakes to garnish

 

Directions:

To start, brush the front and back of the bread slices with only 2 tbsp of the olive oil. Toast the bread until golden and crispy, yet still soft in the center. In a small mixing bowl, mash the avocado to your likings, whether that be completely smooth or somewhat chunky and then season this mixture with salt and pepper. In another small mixing bowl, cream together the cream cheese with the lemon juice and 1 tsp of fresh thyme. To serve, spread the lemon and thyme cream cheese mixture onto the warm, toasted bread slice. Overtop, smear the avocado mixture onto the toast. Garnish your avo toast with red pepper flakes, 1 tsp of fresh thyme, and the remaining olive oil! Serve immediately and enjoy!
