Toasted Coconut and Almond Granola

(Serves 6-8)

Ingredients:
-1/4 cup of almond butter
-1/4 cup of agave nectar
-1/4 cup of coconut oil
-3 cups of oats
-1 teaspoon of vanilla extract
-3/4 cup of halved almonds
-1/3 cup of shredded coconut

Directions:

Preheat oven to 350 degrees F to begin. In a large microwave safe bowl, heat the almond butter and the coconut oil for about 30 seconds to a minute, until completely melted and smooth. Add the agave nectar, oats, vanilla, and almonds to combine. Spray a baking sheet with cooking spray so the granola doesn't stick. Spread the granola mixture out onto the baking sheet making sure the granola is in an even layer so it all bakes around the same time and rate. Bake at 350 F for 5-10  minutes until the granola has just begun to lightly brown. At this time mix in the coconut flakes and bake for another 2-3 minutes so the coconut becomes toasted. Remove from the oven and let rest for 5 minutes until cooled. Break apart granola into smaller chunks, and enjoy!
